Fruit Slice

Ingredients

  • 1 cup self-raising flour
  • 1 cup brown sugar
  • 1 cup coconut
  • 1 cup sultanas
  • 1 egg beaten
  • 125g butter
  • 1 cup icing *to decorate

Method

  1. Combine flour, sugar, coconut and sultanas, and mix well.
  2. Add egg and melted butter. Mix and press into a slice pan.
  3. Bake at 180C for approximately 25 minutes or until golden brown.
  4. Turn onto a wire rack and ice with lemon icing.

  • 1 20cm x 30cm slice pan

I used lemon icing.
