Homemade nut butter is easier than you think and tastes worlds better than the jar. Roasting the nuts first brings out their natural oils, and all you need is a food processor, a little patience and three simple ingredients.

  1. Preheat the oven to 170°C (150°C fan-forced).
  2. Spread the almonds and cashews on a baking tray and roast for 8–10 minutes, until fragrant and lightly golden.
  3. Cool for 10 minutes. The nuts should still be slightly warm.
  4. Tip into a high-speed food processor and process for 10–12 minutes, scraping down the sides every couple of minutes. The nuts will go from crumbs to a thick paste, then turn silky and smooth.
  5. Add the salt, pulse to combine and spoon into a clean jar.

Store in the fridge for up to 1 month. For a sweet version, blend in 1 tsp cinnamon and 1 tbsp honey. For a chocolate spread, add 2 tbsp raw cacao powder.
