Honey Almond Granola

Once you make your own granola, you will never go back to store-bought. This one is golden, crunchy and lightly sweetened with honey, and full of almonds, seeds and coconut. Serve it with yoghurt and fresh fruit, or eat it by the handful.
Ingredients
- 4 cups (360 g) rolled oats
- 1 cup (150 g) raw almonds, roughly chopped
- ½ cup (70 g) pumpkin seeds
- ½ cup (70 g) sunflower kernels
- ½ cup (30 g) coconut flakes
- 1 tsp ground cinnamon
- ½ tsp sea salt
- â…“ cup (80 ml) honey
- â…“ cup (80 ml) coconut oil or light olive oil, melted
- 1 tsp vanilla extract
- ¾ cup (100 g) dried cranberries or sultanas
Method
- Preheat the oven to 160°C (140°C fan-forced). Line two large baking trays with baking paper.
- In a large bowl, combine the oats, almonds, pumpkin seeds, sunflower kernels, coconut, cinnamon and salt.
- Whisk together the honey, oil and vanilla, then pour over the oat mixture and stir until everything is evenly coated.
- Spread the mixture thinly over the trays.
- Bake for 25–30 minutes, stirring halfway, until deep golden.
- Cool completely on the trays (it crisps up as it cools), then stir through the dried fruit.
